We asked him what inspires you?
My inspiration for becoming a Chef started in college from when I taught myself how to cook and wishing I could teach everyone. From there I began at Wegmans cleaning the dishes, making croutons and helping customers. Eventually I made the choice to go to the CIA and learned a ton while there. Afterwards I went on to work at a local country club but found myself still lost. When 2020 came, I made the choice to work at REDD and became the new fish cook. For a year I absorbed as much as possible and became Sous Chef. Today I continue to advance my knowledge working alongside the most talented people I've ever met.

We are pleased to announce that Fred Merwarth and Oskar Bynke from Hermann J. Wiemer and Standing Stone vineyards will host the REDD Wine Series Event on May 4. Long considered one of the iconic wineries in the Finger Lakes, Wiemer wines continue to win acclaim both domestically and internationally. Fred was recently awarded the Wine Enthusiast Winemaker of the Year, a first for a New York winemaker.
