Our next #24SupperClub on Monday, February 26 will be a tribute to the late Chef David Bouley. His influence was profound and the news of his passing sent shockwaves throughout the US, eliciting an outpouring of love, reverence and gratitude for Bouley.
“I never worked for him but I always wanted to grow up and be like him. I would eat there for lunch when it was $35 pp and five courses. I was broke, would bring $50 in cash because I didn’t have a credit card and would have one glass of wine. He would look out over the dining room and recognize that I must be a cook in the city somewhere and send out extra courses and glasses of wine. The food was amazing and I felt like I was in France; that was 1994 and Bouley was ranked the best restaurant in the city. Last year we were lucky to host him at Redd and cook for him. Brad (@scrandall) and I spent a couple hours talking to him after his meal and he shared some great stories. We had both worked at Roger Verges Moulin du Mougin in the south of France and he told stories of Daniel Boulud, another of my mentors. The culinary world lost one of its giants, in my mind the 2 best American chefs of all time were David Bouley and Thomas Keller.“ - RR

Proceeds from this year’s dinner will go on to benefit @campgooddays and www.stopthevoid.org. *Tickets are priced at $500 per seat for a multi-course menu by Richard Reddington and Josiah Citrin, with a wine accompaniment. Franck Achille has been a member of our staff since 2021 and is an integral part of our Porter team. His voice resonates and his smile is infectious to the entire staff. He often assists with prep tasks in the kitchen while also ensuring our cooks have supplies they need to execute service.
No restaurant can survive without a solid team of porters providing you with clean tools, serving ware and plates- all helping to maintain the flow of service with attention to detail. An often unseen part of the hospitality we all work together to provide, their dedication is palpable and so appreciated🙏🏼

This weekend Chef Richard Reddington and Brad Pareira participated in the premiere Burgundy event for the US, hosted in NYC @lapaulee, alongside longtime friends and mentors, chefs Daniel Boulud, Gabriel Kuther and David Kinch.
We want to take the time to give a public heartfelt thanks to our talented team. This group has weathered a grueling pace of high volume during our long anticipated opening in August 2019, the uncertainty in our industry and city during the pandemic and the addition of an outdoor space equivalent to that of another restaurant. They succeeded through the challenges and have grown stronger through our successes as well as the errors. The work put forth by this group is unmatched and we push each other upward and onward everyday. We hope you stick along with us for the journey👋🏼

We asked him what inspires you?
My inspiration for becoming a Chef started in college from when I taught myself how to cook and wishing I could teach everyone. From there I began at Wegmans cleaning the dishes, making croutons and helping customers. Eventually I made the choice to go to the CIA and learned a ton while there. Afterwards I went on to work at a local country club but found myself still lost. When 2020 came, I made the choice to work at REDD and became the new fish cook. For a year I absorbed as much as possible and became Sous Chef. Today I continue to advance my knowledge working alongside the most talented people I`ve ever met.
